Berdasarkan Struktur Kimia<\/b><\/h3>\n<p><span style=\"font-weight: 400;\">Berdasarkan struktur kimianya, lipid adalah ester gliserida dengan jumlah <\/span><b>atom lebih dari 10<\/b><span style=\"font-weight: 400;\"> yang terbentuk dari <\/span><b>reaksi esterifikasi antara asam lemak<\/b><span style=\"font-weight: 400;\"> dan <\/span><b>gliserol<\/b><span style=\"font-weight: 400;\">. Selain itu ester gliserida membentuk lemak dan minyak. Berdasarkan Struktur Trigliserida<\/b><\/h3>\n<p><span style=\"font-weight: 400;\">Berdasarkan struktur trigliserida, lipid dibagi menjadi dua jenis yaitu lemak dan minyak. Lemak dan minyak tergolong senyawa trigliserida atau triasilgliserol yang berarti senyawa yang memiliki 3 gliserol. Tiga OH dari gliserol ini dapat diubah dengan sejenis sisa asam atau berbagai jenis sisa asam. Tetapi paling umum dijumpai adalah 15 atau 17. Lemak yang terbentuk dari asam karboksilat sejenis (R1= R2=R3) disebut <\/span><b>lemak sederhana<\/b><span style=\"font-weight: 400;\">. Jika terbentuk dari <\/span><b>dua<\/b><span style=\"font-weight: 400;\"> atau <\/span><b>tiga jenis asam karboksilat<\/b><span style=\"font-weight: 400;\"> disebut <\/span><b>campuran<\/b><span style=\"font-weight: 400;\">. Penamaan lemak dimulai dengan kata gliseril yang diikuti nama asam lemaknya.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Penamaan dari lemak dan minyak sering diberikan sesuai dengan <\/span><b>asam lemak pembentuknya<\/b><span style=\"font-weight: 400;\">. Contoh: tristearin dari gliserol dan tristearat, dan tripalmitin dari gliserol dan tripalmiat. Selain itu, minyak dan lemak dapat juga diberi nama dengan cara yang biasa dipakai untuk penamaan suatu ester. Fosfolipid bersifat amfifilik yang memiliki gugus kepala (fosfat) dan gugus ekor (lipid) yang bersifat hidrofil (sistem koloid yang fase pendispersinya suka menarik medium pendispersinya) dan gugus ekor (lipid) yang bersifat hidrofob ( istem koloid yang fase terdispersinya tidak suka menarik medium pendispersinya). Contoh dari foslolipid antara lain fosfolipid bilayer (membrane sel), fosfatidikolin (lestin), fosfatidiletanolamin, dan fosfatidilserin.<\/span><\/p>\n<h3><b>2. Steroid<\/b><\/h3>\n<p><span style=\"font-weight: 400;\">Adalah turunan lemak yang tidak mengandung gugus asam lemak dan gugus ester. Steroid sama seperti fosfolipid bersifat amfifilik dan tersusun atas 4 cincin karbon dengan jumlah ikatan rangkap berbeda-beda dan mengikat bermacam-macam gugus.
